Tarragon Blue Cheese Turkey Patties
- 2 tablespoons Dijon-style coarse ground mustard
- 2 teaspoons honey
- 1pound ground turkey
- 2 ounces blue cheese, crumbled
- 1/4 cup finely chopped red onion
- 1 teaspoon chopped fresh tarragon
- 1 – 2 teaspoons bottled hot pepper sauce
- 4 sandwich buns, split and toasted
- 4 leaves lettuce
- Thinly sliced red onion
- Tarragon leaves
- In a small bowl stir together the mustard and honey; set aside.
- In a large bowl combine the turkey, half of the blue cheese, the chopped red onion, chopped tarragon, and hot pepper sauce. Shape mixture into 4 3/4-inch thick patties.
- For a gas or charcoal grill, grill patties on the greased rack of a covered grill directly over medium heat for 12 to 15 minutes or until 165 degrees F, turning once. Serve on buns with lettuce and red onion slices drizzled with mustard-honey mixture. Garnish with tarragon leaves, if desired.
