Chocolate Mousse

  • 7 oz dark (semi sweet) chocolate
  • 1 tsp sugar
  • 1 tsp vanilla extract
  • 5 eggs
  • 1 cup whipping cream

Melt the chocolate in the double broiler.  Cool down to about room temperature.  Separate the eggs and mix the egg yolks with the sugar and vanilla extract.  Add the egg mixture, then gently fold the egg whites into it.

Refrigerate for 2-3 hours.
