Italian Cream Cake

  • 2 cups flour
  • 1 teaspoon soda
  • 5 eggs
  • 1/2 cup shortening
  • 1 stick margarine
  • 2 cups sugar
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 cup chopped nuts
  • 1 small can or 1 cup coconut

Directions:

Stir together flour and soda, set aside. In small mixer bowl, beat 5 egg whites stiff, but not dry, set aside. Cream together shortening, margarine and butter.  Add egg yolks and beat well. Add alternately buttermilk and flour-soda mixture. Stir in vanilla, chopped nuts and coconut. Fold in beaten egg whites. Pour into 3 greased and floured 8-in cake pans.  Bake at 350 for 25 minutes or until done.

Cream Cheese Frosting

Beat until smooth 1 (8 oz) softened cream cheese and 1/2 stick margarine.  Add 1 box powdered sugar, 1 teaspoon vanilla and 1/4 – 1/3 cup very fine chopped nut.
