Lisa’s Ginger Cookies

Ingredients:

  • 2/3 c vegetable oil (or 1/2 c extra light olive oil)
  • 1 cup sugar
  • 1 egg (add extra egg for fluffier cookies)
  • 4 tbl molasses
  • 2 tbl fresh chopped ginger
  • 2 c flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 tsp ginger
  • 1/2 tsp cinnamon

Preheat oven to 350 degrees.

Mix oil, sugar, egg, molasses and fresh ginger with whisk in mixer bowl.  Combine flour baking soda, salt, ginger, cinnamon. Stir in sugar and egg mixture with wooden spoon.  Form balls, roll in sugar.

Bake 15 minutes.
